What is Hakko Jikan?
Hakko Jikan is a small brand built around one idea: Japanese fermentation doesn't have to be complicated. “Hakko” means fermentation in Japanese, and “Jikan” means time — the time it takes for flavor to develop, and the time you spend learning and cooking with it.
We started in Japan, sharing simple ways to bring koji, miso and other fermented foods into everyday home cooking. Now we're opening that same approach up to people outside Japan who are curious about where these ingredients come from and how to use them.
Why Japanese Fermentation?
Japan has a long history of fermented staples — koji, miso, shoyu, amazake, nukazuke — each shaped by regional ingredients and generations of home and craft knowledge. We don't treat that history as a mystery to be solved, just a tradition worth understanding on its own terms.
